Organic Coconut Sap Sugar
This 100% organic coconut sap sugar comes from tuba (coconut toddy) versus brown sugar, which is made from tubo (sugarcane).
This gives coco sugar a lower glycemic index of only 35 while table sugar is at 68, making the former a healthier substitute without sacrificing taste or sweetness.
In addition, The Free Food Co. melts coconut sap using uling (briquettes or compressed charcoal) instead of the typical gas flame. This method preserves the organic nature of the sugar and that it also infuses a unique smoky taste.
